Classic Minestrone Soup

                       .....Classic Minestrone Soup.....

                              

         1... 2 Tbsp olive oil

         2... 3 Slice of bacon,chopped

        3... 1 Carrot

        4... 1 Red onion

        5... 1 Celery stick

        6... 1 Gralic cloves,finely chopped

        7... 500 ml Chicken or Vegetable stock 

        8... 2 Tbsp tomato puree

        9... 3 Peeled tomatoes 

       10... 5 Leaves of spinach

       11... Few Fresh thyme 

       12... 100g Pasta shells

       13... 50g Parmesan

       14... pinch of Salt and Pepper

     Let see how to make this......

            Peel the carrot,then carrot,onion and celery cut in to small dice.Chop the spinach leaves and remove the thyme leaves form their stalks and finely chop....

               Heat the olive oil in a saucepan.Add the bacon and cook about 1 minute.Add the onion,carrot and celery and cook for 4-5 minutes before adding a pinch of salt and pepper.Add the thyme and bay leaf.Cook for 2 minute and then add the gralic and the tomato puree.Cook 1 minute before adding the chopped tomatoes..Cook 5 minutes and then add the chicken or vegetables stock.Bring to the boil,add the pasta and cook 5 minutes.Once the pasta cooked,then add the spinach and cook 20 seconds.

                  Serve the soup with sprinkling of Parmesan and olive oil.........
