Slow-cooked Lamb with Onion & Thyme

                         Slow-cooked Lamb with Onion & Thyme..
 

1... Half  a leg of lamb( about 1kg )

2... 4 Large onion

3... Handful fresh thyme 

4... 200ml Red wine

5... Parsley

6... 4 Tbsp olive oil 

7... Salt and Pepper


 Prepare the lamb,heat oven to 170C.Wipe the meat all over and season,Heat 4 tbsp of olive oil in a large heavy flameproof casserole,add the meat and fry all over o a fairly high heat for 10 minutes,turning until it is evenly well browned and remove to a plate. 

   Thinly slice the onion,Add to the pan and fry for about 8 minutes until tingr with brown.Add a few of the thyme sprigs and cook for further minutes.Season with salt and pepper.

 Sit the lamb on top of the onion and add the wine.Cover tightly  and bake 3 hours.

  To finish,strip the leaves of thyme spring and chop them with the parsley.

 Sever with hot and garnish...
